TESTIMONIALS
From October 10, 2009 Sustainability in the Food Industry class testimonials.
“Thank you! I am beginning the Sustainable food journey and would like to learn simple seasonal cooking dishes as well as further expanding this message!”
Roland
“Very interesting class. Lots of good info on climate change and the environmental issues. Incredible to hear how the FDA and agriculture in this country is influenced by big food companies for volume and profit. The food offered today was great! Thank you!”
Julie
“The taste test really surprised me! I thought I could pick out the organic food over the genetically modified foods, (GMO), but I was wrong about half the time! Tracy helped me realize that the genetically modified foods are often made to please our taste buds with genetically modified ingredients. Bottom line, we really need to be careful and read the labels!”
Kristin
“Thanks for helping raise awareness and let people know about the choices they can make.”
Fan
“The info on Monsanto was great because so many people are being kept in the dark about the food industries. The food comparison activity was interesting too because it is funny how our taste may lean toward comfort and recognizing from childhood than what is really better for us.”
Carri
“Every chef in business should know more about this.”
Chef Stephan
“A great introduction to the issues and global effects that pervade our food supply chain.”
Walker
“A very informative class on the difference between organic and genetically engineered foods, (GMOs). I learned that GMOs might taste better, but I totally buy and cook organic.”

To Whom It May Concern:
I am pleased to submit this letter of reference on behalf of Tracy Stamos and her fine company Savory Green, Inc.
Verdasys is a rapidly growing 100-person company located in Waltham. We develop and market state-of-the-art enterprise scale data security technologies for Global 2000 corporations. My position is Chairman of the company. I am sixty-seven years old and have held similar positions for the past thirty years. During those years I have been involved in the planning and approval of many company banquets, parties and dinners and accordingly have a significant basis for setting standards of comparison. Within that context our company event, in the summer of 2007, catered by Tracy is a standout event success; a real touch of class.
During the process of interviewing caterers for our summer celebration, a friend recommended we speak to a young woman, recently graduated from Harvard, who was in the process of establishing an environmentally friendly catering service. Though skeptical, we set a meeting and were captivated from the beginning. Tracy’s novel approach, tantalizing menu, earnest and obviously sincere menu made a very strong impression. After numerous interviews and due diligence we concluded that Savory Green, although not the lowest cost alternative, appeared to be an extraordinary value. The food, its presentation and demeanor of their service staff promised to deliver a unique and wonderful dining experience, a real treat for our staff. And that is exactly what Tracy delivered.
Tracy’s menu included Southern Italian Bracciola cooked in a classic tomato sauce, sprinkled with regional cheeses and pignoli nuts and filled with whole hard boiled eggs…Oh My God! In addition there was Moroccan Chicken with couscous along with Chinese Style Barbequed Pork with Sushi rice. These dishes were accompanied by Jimbotta, Southern Italian Stuffed Peppers and Horriatiko Salad. Desert consisted of out-of-this-world Italian and French pastries. The food was perfectly prepared and presented and the serving staff assured that the appearance of the food and its temperature and quantities were to perfection.
The event was spoken of throughout the following week. As I think about while writing this note, I’m thinking that choosing Savory Green to cater our event was an inspired decision. I whole heartedly recommend them.

Savory Green is a great new concept superbly executed. The food and service made our product launch party. While guests were engaged in the environmentally conscious elements of the food, beverage and service the food itself was unique, delicious and beautifully served. Savory Green made our event feel more like huge homemade holiday meal then "catered" and was wonderful.
We had hors d'oeuvres and seated dinner for over 100, on time, piping hot (unique in my experience for an event of this scale) and without the usual raw veggies and cheese plate. Each course and dish was truly unique and the biodynamic wine selection paired very well. The food, wine and green aspects of the catering was the talk of the event - a smashing success.
I recommend without reservations Savory Green for any event you have in the future, we'll be using them going forward - Kudos to Tracy and her team!!!

Tracy,
I hadn't had the chance to thank you for a truly amazing food and catering experience that you created at our company celebration a few months ago.
I'm a very particular person and not easy to please, especially when it comes to food. That being said, I just wanted to take a minute of your time to share some comments about the event you catered at Verdasys.
Tracy, you have set the standard of quality taste by using noticeably natural foods. The tastes are uncompromising and your selections truly exquisite.
From appetizers to main course, everything blended extremely well and was accompanied to perfection. The natural beef in your bricole, the texture of your gnocchi, and the freshness of your giambotta are all dishes that I can't wait to try again! (Sorry for any misspellings)
The food is clearly in a ranking of its own and I haven't even started talking about the amazing presentation, and service.
The appetizers were arranged artistically and the main courses were classic and elegantly presented. The staff was very tentative and prepared at a moments notice to get whatever you needed.
I would recommend Savory Green to those who want the very best cuisine, the freshest ingredients and impeccable service available anywhere!
Please feel free to use any of my comments above or have anyone contact me with any questions.
Thank you Tracey! Thank you Savory Green!

A short time ago I had the pleasure of attending an event catered by Tracy Stamos' Savory Green. Tracy's incredibly friendly team of chefs and serving staff began the event with a series of hors d'oeuvre stations that included a mix of Greek and Italian delicacies which made it difficult to leave room for the main course. The stations were nicely arranged and resupplied often throughout the pre-meal festivities
The main course was served buffet style with a long set of tables offering a variety of unique and traditional Mediterranean dishes. Savory Green did a great job of mixing traditional dishes one might expect to find in a corporate event like this as well as adding a number of items that I'd never had before. By far my favorite was a dish with roles made of slow cooked beef in a red sauce that brought me back for seconds and thirds the entire night.
Despite the meal being served buffet style, everything was cooked to perfection with the right temperatures, no burnt corners or bottoms as one might expect from a tray served buffet, and again a steady stream of refills that kept no one waiting. To round out the evening, dessert covered a wide assortment of delicious pastries and cookies and, of course, great quality coffee.
I would recommend Savory Green to anyone looking to cater a high-quality event with exquisite food for guests who know how to appreciate something that is unique and original when they encounter it.
Sincerely,
Tomas Revesz, Waltham, MA
I have to commend Savory Green on an exceptional menu and wonderful presentation at an event I attended this summer at a company in Waltham, Mass. The event was held on the building terrace where I found myself enjoying delightful Mediterranean fare, a variety of wines and sparkling beverages. My guest and I concurred that it felt like we were invited into a friend’s home, with the warmth and friendliness that the staff of Savory Green provided, however with the professionalism that you would expect from a corporate affair. The cuisine was light and full of flavor, fitting for a warm summer evening. I would highly recommend Savory Green to cater your corporate events no matter what time of year!
